Grilled Lemon-Herb Chicken

This is one of my all-time favorite summer recipes for grilling! Full of flavor and healthy too!

8 Chicken Thighs Skinless Boneless

1 Lemon

2 cloves sliced Garlic

2 T Dijon Mustard

2-3 T Olive Oil

1 T Soy Sauce or Coconut Aminos

Black Pepper

Bunch Fresh Herbs (Oregano, Thyme, or Rosemary are all equally great here!)

Directions

Zest the lemon, then slice into thin slices.

Roughly chop the herbs and toss them in with the Oil, dijon, garlic slices, lemons, soy, and pepper.

Muddle the lemons and garlic a little, but don’t squeeze the juice. The acid will cook the chicken ahead of time and make it tough.

Marinate at least 4 hours and even up to a few days (I’ve done this and it’s even better!)

Grill on a medium grill at 400 degrees for about 8-10 minutes. You can grill the lemon slices too!

Throw some more fresh herbs for garnish.
