Shaved Zucchini Salad with Pine Nuts

This salad takes advantage of seasonal zucchini and basil in a refreshing side dish that takes about 5 minutes to prepare!

2 medium zucchini

1 lemon

2 T Olive Oil

Parmigiano- Reggiano or Pecorino Romano

3-4 T Pine Nuts

Fresh Basil thinly sliced

Microgreens (optional)

Directions

Use a vegetable peeler to shave the zucchini into thin ribbons and put it right into the serving bowl.

In a separate bowl, combine lemon juice, olive oil, a pinch of salt, and pepper to make a vinaigrette.

Combine the zucchini with vinaigrette and thinly sliced basil and let sit for about 5 minutes.

While it sits:

Lightly toast pine nuts until golden.

Use a vegetable peeler to shave cheese over the top

Add the pine nuts and microgreens for garnish
